The cultivation of vines is conducted without the use of fertilizers and according to natural farming concepts that go beyond the biological. Such cultivation techniques allow me to significantly increase the content of polyphenols (which together with alcohol in the human body produce a remarkable concentration of Omega 3)
The economic crisis requires me to do my part to make it more usable my Brandisio. I then decided to significantly reduce its price by giving up part of my income, and I reserve the bare minimum to keep producing it.
It is made exclusively from grapes from the vineyards of my property that have nearly forty years and are located on the only hill of the Primitivo di Manduria. It is not an approved wine and has well marked and distinctive organoleptic characteristics that are the result of interactions between climate, land and plants, planted sapling. Interactions that characterize it in every year that there will therefore never identical to the previous one. The cultivation of vines is conducted without the use of fertilizers and according to natural farming concepts that go beyond the biological. The grapes are picked by hand in order to bring only ripe and healthy grapes at the winery, the fundamental measure to produce quality wine.
The bottle should be uncorked at least one or, better, more hours before serving it. And then advisable to pass the wine in carafe using a filter, before serving it, taking care to leave a small amount into the bottle where they will remain any deposits (which may be used to prepare, for example, a nice risotto Primitive) due to the fact that the wine has not been filtered. This is to prevent the loss of some of its unique characteristics. The service temperature is around 18/20 ° C. It should be stressed that the best expression in terms of aromas and flavors is obtained after a short period of permanence of wine in the glass to be strictly very large chalice. With the passing of minutes it will be able to perceive the evolution of the organoleptic characteristics that are expanding in terms of aromatic and flavor intensity. It should be swirling the wine in the glass, before checking the evolution, since it is precisely the contact with oxygen in the air which allows the escape of aromas and flavors.
The Brandisio goes well with both savory and / or spicy dishes (not overly) and grilled meat. I think that does not go well with the Parmesan and even with sauces based on tomatoes, the better the grated cheese over pasta. If you decide to enjoy the wine with cheese, I recommend the goat (or sheep) not very seasoned.
